California Culinary Arts A/B

California Culinary Arts is a two-semester course designed to promote understanding of the history and development of culinary arts, nutrition fundamentals, and food preparation techniques. Students will examine the evolution of cuisines and kitchen equipment, safety practices and laws, and proper cooking techniques for various foods. The course places a particular focus on menu planning, food presentation, kitchen management, and professional skills for career advancement in the food service industry. In unit activities, students will practice recipe interpretation and yield conversion, plan menus, and identify cooking methods for various food types. Students will also explore customer service, green certification practices, and career paths in the food service industry.
